A sugar for glutamic acid fermentation, and a preparation method therefor and an application thereof. The preparation method comprises: using a composite enzyme preparation B to perform glycation on the pre-treated corn slurry to obtain sugar for glutamic acid fermentation, wherein the pre-treatment relates to performing liquefaction on the corn slurry after being performed enzymolysis by a composite enzyme preparation A; the corn slurry is obtained by performing liquefaction on the whole grain corn powder; the composite enzyme preparation A comprises proteinase and lipase; the composite enzyme preparation B comprises diastase, phytase, and cellulase.

L'invention concerne un sucre pour la fermentation d'acide glutamique, un procédé pour sa préparation et une application correspondante. Le procédé de préparation consiste à : utiliser une préparation enzymatique composite B pour effectuer une glycation sur la suspension prétraitée de maïs pour obtenir du sucre pour la fermentation d'acide glutamique, le prétraitement se rapportant à la réalisation d'une liquéfaction sur la suspension de maïs après avoir effectué une enzymolyse par une préparation enzymatique composite A ; la suspension de maïs est obtenue par la réalisation d'une liquéfaction sur la poudre de maïs à grains entiers ; la préparation enzymatique composite A comprend de la protéinase et de la lipase ; la préparation enzymatique composite B comprend une diastase, une phytase et une cellulase.

一种谷氨酸发酵用糖及其制备方法和应用,制备方法为:使用复合酶制剂B对预处理后的玉米浆料进行糖化处理,得到谷氨酸发酵用糖;其中,预处理为将使用复合酶制剂A酶解后的玉米浆料进行液化处理;玉米浆料为玉米全粒干粉经液化处理得到;复合酶制剂A包含蛋白酶和脂肪酶;复合酶制剂B包含糖化酶、植酸酶和纤维素酶。
